How to use tea in recipes:

Steep tea in broth, cream or juice and add to soups and stews.

Use tea instead of plain water to cook whole grains like rice, quinona and millet.

Soak dried fruit in tea.

Make syrups for poaching fruit

Lapsang Souchong:

Use Lapsang Souchong in any recipe that requires liquid smoke. Simply brew the tea to your taste and substitute. 

Grind the leaves to a powder and add Lapsang souchong to any sweet or savoury dish for a natural smokey flavour. Great to add oomph to vegetarian dishes.

Green Tea:

Brew up some green tea, allow to cool and use instead of water for ramen soup or cooking vegetables, especially greens. Poach a fish in tea with fresh ginger and shallots. 

Black tea:

Grind black tea with salt, peppercorns, ginger and coriander, coat a fillet of fish and bake. Add tea to add extra body to your favourite marinade recipe. 

Peppermint:

This has a myriad of culinary uses. Use a peppermint brew instead of water when making syrups for cocktails or use for minty hot chocolate in Winter.
